Back in the day, capsules were used to protect corks from rodents or dirt in old cellars. Now they are used more for decoration and tradition since wine bottles are stored in cellars or warehouses where temperature, moisture, and cleanliness are all regulated and controlled. Many designers prefer not to use them on their bottles, because it looks much more streamlined and cleaner aesthetically. It's also far more sustainable to go without them.
Not only that, but they're much easier to open without the foil! You will commonly see wines that are best consumed within 3-5 years of bottling without the capsule. We're always trying to brainstorm ways to make our process more sustainable and environmentally-friendly, so look out for more wines coming to you in a sleeker, capsule-less presentation!
